We got up early Monday morning and took the train from Washington D.C. to New York’s Penn Station. It was only about 3.5 hours and it is nice because it takes you straight into the city. Salted Caramel Ice Cream
About a month ago we got a new toy for our stand mixer–an ice cream maker attachment! It’s been a lot of fun watching liquid magically whirl itself into a thick, refreshing treat. We’ve already used it twice, first for our yummy Lemon Gelato and most recently for Salted Caramel Ice Cream. I. Love. Caramel.

Kara has been making them for awhile now and she’s always nice enough to save a few for me. Then I go ahead and scarf them all down in one sitting. Why are the foods that taste the best always the most unhealthy? Why can’t my favorite food be plain, steamed broccoli? Or plain grilled chicken breast. Yuck!
Coconut Chicken with Apricot Sauce
I don’t know if you guys have noticed, but I’m really not much of a meat girl. Rather than steaks and burgers and such, I prefer foods of the sweet variety and carb heavy foods like pasta and bread. Do you feel the same way? What can I say…chocolate and spaghetti are so much more satisfying!
