Pumpkin Carving Contest recipe picturesHappy Halloween!! Did you go trick-or-treating? Or to a costume party? Any creative costumes? If you celebrated, then you’re lucky! I moved over the weekend so I spent the entire weekend unpacking, cleaning and organizing. I think I’m about 90% done. I did have time to carve pumpkins though! We would never miss out on that…it’s tradition. Each year we have a friendly pumpkin carving contest and we ask my parents to judge. They of course say they’re all winners, but deep down I know mine are the best. Well…maybe not this year.

Halloween Rainbow Cake

Halloween Rainbow Cake recipe picturesWhen Cliff sent me a link to this cake I knew I had to make it. I have seen these “rainbow” cakes floating around the internet for awhile now but I have never had the occasion to make one. (Maybe a Rainbow Brite themed birthday party?)  But this Halloween version; perfect!! I personally find unnaturally colored cakes to be unappetizing. But for Halloween unappetizing food is perfectly acceptable, maybe even preferred! The more disgusting the better, right? And actually the level of disgusting-ness for this cake is pretty low compared to some of the other things I’ve seen out there. Unless of course boxed cake mix and canned frosting disgusts you! Then you might be terrified!

Chai Tea

Chai Tea recipe picturesI think I’ve ordered Chai Tea from Starbucks at least a thousand times. The first time I tried Chai Tea I told my mom it warmed my soul. She makes fun of me for that statement to this day! But I said it back then and I’m sticking to it. It has this warmth and spice that really does make you feel warm and fuzzy inside.  As corny as it sounds there is something about tea on a cold day that makes me happy, especially Chai Tea. Here it is, (from Wikipedia) Sopapilla cheesecake is a dessert dish, inspired by the classic cheesecake and the sopapilla, a pastry that originates from New Mexico. Typically made in a 9×13 pan, it tends to be a pot-luck favorite. As popular as it is, there are many variations, for taste, health and appearance.

I have heard of sopapilla cheesecake before, but I really had no idea what it was. I thought it was Mexican. Apparently, sopapilla is from New Mexico. Good to know. But all I needed was to see the picture of sopapilla cheesecake on Pinterest and I was sold. I have zero willpower when it comes to desserts. Nada.

“Italian” Edamame

Italian Edamame recipe picturesRecently Cliff and I have been trying to eat healthier. It is one thing to say we are going to eat healthier but actually doing it is much harder! It doesn’t help that all of our spare time goes into researching new recipes and cooking and sampling tons of food! Do you know how hard it is to make up a batch of cupcakes with tons of frosting and then not eat them? Me neither, because I can never resist!! You always hear about celebrities that have lost weight and they say they just eat fish and steamed vegetables. How can people live on fish and steamed vegetables? For me, that is not a possibility. There is no way that I am not going to eat that cupcake. But instead of eating 3 maybe I could eat just 1. That is much more realistic. In addition we are trying to eat healthy food that tastes good!
