Even though I had been longing for Fall for weeks I had still been resisting getting into the Fall spirit. First of all, I don’t want to rush through the beautiful weather we have in Summer just so that I can make an apple pie and enjoy the smells of Fall. Soon enough I would be complaining that it is too cold, so I try not to take Summer for granted. Secondly, I try not to start my Fall cooking too early. It is a shame to burn out on apple and pumpkin recipes before Halloween even comes. And when is it ok to start getting Halloween decorations out? Would this weekend be acceptable? We already made these decorations so I might as well just get everything out, right? Anyway, I was waiting for the perfect Fall/apple recipe to get me into the spirit. As soon as I saw this one, I was ready to begin the transformation from 90 degree days to 50’s, sweaters, and boots.
Beer Cheese Soup
Last weekend, I watched Sandwich King for the first time. There are several recipes of Jeff’s that we’ve been wanting to try. We had blogged another recipe of his a while back and after watching this particular episode we knew we had to make Beer Cheese Soup ASAP.
Pasta with Roasted Vegetables and Ricotta Cheese

I have talked before about how I try to prepare meals, fully or partially, ahead of time. Honestly, I don’t know how people manage without doing this. I try to prepare nice meals almost every night. I do not get home from work until about 5:30 and by then I do not have the patience to spend one to two hours cooking. At the same time, there are only so many nights in a week that I can get away with serving frozen pizza.
If you are wondering what that number is, it is two. After two, I get a nasty look, so two pizza nights is the limit in our house.
Homemade Cinnamon Applesauce
Third official day of fall. I never realized how much I love fall until recently. It’s the best of the best. First and foremost, it brings back my favorite, comfort food. Soup in particular. I love soup. And of course, the leaves change color and it is so pretty outside. Fall also means my absolute favorite wardrobe. Fall jackets, puffy vests, blazers, riding boots, cute scarves, tights, mustard yellow in every possible place. I freakin’ love mustard yellow!!

Halloween Hurricane Vase
This past Saturday, Cliff was out of town leaving Kara and me on our own…with no photographer! It was a day off from cooking and baking. So what did we decide to do? Crafts…naturally. First, we started shopping for a DIY project that I CAN’T WAIT to fill you in on when complete…but in the meantime, Kara pinned this adorable Halloween vase a few weeks back and we decided it was the perfect opportunity for Mom and daughters to get together and make one for ourselves.
