In mid January my roommate and I hosted a shindig to celebrate her birthday. We made a bunch of classy apps, served our favorite cocktail in a beverage dispenser and had over some close friends before we all ventured off to the bar scene. Some of the recipes included Bocconcini Arrancini, Mac & Cheese Bites, (delicious-one day we’ll post this) Baked Brie and these little guys…Bacon Wrapped Stuffed Dates.

Recently, we were asked by the peeps at Just Born, Inc., to host a giveaway for our readers. We could not be a better candidate for a PEEPS® giveaway. We love ourselves some PEEPS® around here. Growing up, I was never a big PEEPS® fan. But, my Mom was. She would buy us PEEPS® knowing she would be the one to eat them. Last year, I was introduced to the goodness that is the chocolate covered PEEPS®. Game changer!

Growing up my Mom used to make chicken kiev every once and awhile. As we got older, everybody grew to not like this dinner all that much and she hasn’t made it in years. I actually liked chicken kiev…but I think it had more to do with the full layer of breading than anything else.

Champagne Risotto with Shrimp

As I mentioned earlier Cliff and I were able to get away for a few days to Mexico. It was heavenly! We stayed at an all-inclusive resort. Sometimes the restaurants at all-inclusives can be hit or miss. This was a smaller resort and it only had 3 restaurants. 1 buffet with a nightly theme, 1 Asian, and 1 Italian. We had heard that the Italian was far superior to the other restaurants but we tired them all anyway. We should have just gone to the Italian every night! I grew up on Italian food and we eat a lot of Italian food but we both really liked the Italian restaurant, El Mirador. One night I ordered champagne risotto with prawns. I wasn’t sure what I would get. Would it resemble risotto at all? Ha! It was surprisingly good though! I was too full from the bread, soup, and antipasto bar to each much but I was sure to at least eat all of the prawns!
