I am off of work today. I am on summer vacation aka – maternity leave. Oh, you didn’t know I was pregnant? Then I guess you don’t follow us on Facebook. I look forward to sleeping in, laying by the pool, and baking cupcakes all summer. Why are you laughing? In all seriousness, I was due, oh about 4 days ago, so we should be welcoming a baby any time now. While we wait, I am just going to lay on the couch, read, and maybe make those cupcakes. Cliff has a fun nursery decorating post coming up soon. I like to call him Martha Stewart; he is so crafty! So, if we disappear sometime next week, now you will know why.
Red Velvet Mug Cake
On Tuesday, I started a new job and I’m really excited about it. It’s similar to my previous position (won’t bore you with details) but it’s a new opportunity and I’m looking forward to bigger and better things. But…let me tell you the real reason I’m so excited.
Biscoff Mug Cake
As Kelly mentioned yesterday we are doing mug cakes all week. We love them and our readers love them, so its a win for everyone! Mug cakes are actually pretty genius for a couple of reasons. First, 3 minutes or less? How can you go wrong? It is actually pretty amazing to me that this is even possible. Secondly, portion control! I can’t tell you how many times I have made a cake and intended to bring it to work or to friends but then decided it is too delicious to share and ended up eating the whole thing myself. No self control at all. With mug cakes I get my mug full of cake and it is gone. No chance of going back for seconds, thirds, fourths. But then again, see reason #1. Only 3 minutes and I can have another. So I guess what I am saying is mug cakes are very, very bad. In the best way. Makes perfect sense, right?

Don’t get me wrong, our Nutella Mug Cake recipe is easy, tastes great and the word Nutella reels me in too. But with over 500 other posts…why is it the reader favorite?
Choco Tacos
Cinco de Mayo really crept up on this year. Again. We almost didn’t have time to share this one with you. But luckily for everyone, we got it done. They are so cute and tasty, too! Choco tacos were one of my favorite things to get from the ice cream man. Kelly and I went back and forth about how to recreate them for awhile. We weren’t sure how to make the shells. Then it hit us, we can use our pizelle maker. There are too many gadgets and pans in our kitchens that we do not use nearly enough and the pizelle maker is definitely one of them. I always forget we even have one! It is a great tool to use to make different shaped vessels. We also made cannoli shells with some of our leftover pizelle batter. You may or may not be seeing those soon.
