On Tuesday, I started a new job and I’m really excited about it. It’s similar to my previous position (won’t bore you with details) but it’s a new opportunity and I’m looking forward to bigger and better things. But…let me tell you the real reason I’m so excited.
Biscoff Mug Cake
As Kelly mentioned yesterday we are doing mug cakes all week. We love them and our readers love them, so its a win for everyone! Mug cakes are actually pretty genius for a couple of reasons. First, 3 minutes or less? How can you go wrong? It is actually pretty amazing to me that this is even possible. Secondly, portion control! I can’t tell you how many times I have made a cake and intended to bring it to work or to friends but then decided it is too delicious to share and ended up eating the whole thing myself. No self control at all. With mug cakes I get my mug full of cake and it is gone. No chance of going back for seconds, thirds, fourths. But then again, see reason #1. Only 3 minutes and I can have another. So I guess what I am saying is mug cakes are very, very bad. In the best way. Makes perfect sense, right?

Grilled Veggie Stacks
I have a confession to make. These Grilled Veggie Stacks were supposed to post on Tuesday. Normally I write my posts the night before they go live but on Monday night I was glued to my TV watching The Real Housewives of Orange County (per the usual!) and well…Grilled Veggie Stacks completely slipped my mind. Perhaps I got caught up in Lydia’s fairy dust/stoner/I’m a Tree Mom’s crazyness. Anyways, I didn’t remember until 7:30 am Tuesday morning when I frantically ran to my computer and re-scheduled it for Friday. Preoccupied much?! Whoops! But hey…better late than never, right?
